VirtualMIDISynth will play the instrument (called "program" in MIDI) the the player ask for, so I suppose Synthesia is set to use a single instrument (Acoustic grand piano by default).
I'm not an expert user of Synthesia; maybe you should ask for further help on their forum.

All Synthesia sample songs only come with Piano 1 as a solo instrument, as far as I know.
You can add any MIDI folder containing MIDI files on your computer from the Synthesia "Songs" settings screen, and you'll get your MIDI files with different instruments/sounds.
Be sure to go to the "Advanced" settings screen and check the "Use Original" value of the "MIDI Track Channels" setting and "Allow" for other settings, to ensure that the software won't prevent you doing anything.
